Chef de cuisine André Fagedet has agreed to welcome small groups of food lovers into his kitchen in the family château, near Gimont in Gascony. His cuisine is based on local produce: duck, pigeon, guinea fowl and the gascony black pig.

The seasons still count for André with asparagus in springtime, wild mushrooms in autumn and game in winter. Out back of the chateau an extensive garden provides herbs and fresh vegetables; seedlings are nourished in 200 year old greenhouses! A lake in the estate provides fresh-water crayfish ... providing you know how to catch them.
The chateau is a 15 room hotel with sumptously decorated rooms and spacious reception and dining areas.

Tuesday:
Arrival of participants in the afternoon: welcome drink and installation in chateau. Dinner and overnight in chateau
Wednesday:
Market day in Gimont: André or
his sister Rosemary will take you in to the market and explain
what's what. In winter, the 'marché de gras' is one
of the most important in the country with buyers coming
from far and wide to buy duck products and foie gras. But
how to choose the right beast? That's a gascony secret.
Lunch in local restaurant in Gimont or nearby.
Afternoon: a two-hour session in the kitchen with André Fagedet.
Evening: gourmet dinner in chateau followed by an 'Armagnac tasting' with André and his team.
Thursday:
Visit to the poultry farm where André buys his fowl, followed by a visit to one of the duck preserving workshops in Gimont
Lunch free - in a local restaurant or picnic
Afternoon: two hour session in the kitchen with André Fagedet. In these hands-on sessions André will cover the preparation and execution of traditional dishes of Gascony - sophisticated but simple enough for each participant to reproduce once he/she gets home (with the help of technical cards in english giving details of ingredients, quantities, baking temps etc).
Evening : gourmet dinner in château followed by a more informal session with André Fagedet on other aspects of SW French cuisine.
Friday:
a last breakfast in the château ... and the rest of Gascony awaits exploration.
